On holiday I learnt...

1. I want, no I need, a blanket just like this one:

 I think I might actually challenge myself to crochet one before our next camping trip

2. Travelling is much more fun when you make the journey part of the holiday


I definitely didn’t miss the hassle of any airports this year

3. I got really really excited about visiting a brand new place


But I did miss visiting a new country a little bit

Bake of the Week: Cheesecake


This week’s bake of the week isn’t really a bake at all, sorry about that! This week is all about cheesecake.



  1. Crush the biscuits into crumbs (putting them into a sandwich bag and hitting them with a rolling pin works wonders)
  2. Melt the butter over a low heat and mix in the biscuit crumbs
  3. Push the crumb mixture into a sandwich tin (I used pie dishes to make smaller cheesecakes)
  4. Mix the cream cheese and the sugar until you get a smooth texture
  5. Add a teaspoon of vanilla essence
  6. Add the cream cheese to the biscuit base
  7. Leave in the fridge for around 1 hr to set

I’ve found the amount of sugar needed can be quite a personal thing so add it slowly and stop when you’re happy. The man reckons just stop when it stops tasting like cheese (if that helps anyone…)

A plain vanilla cheesecake can then be jazzed up with pretty much any fruit you want, I’ve gone for blueberries here but any summer berry would be lovely. Or maybe be more adventurous and go for mango and passionfruit?
  
 My base was a tad crumbly this time which meant quite a messy photo...


Just to spoil you, I made a second cheesecake too!

This uses exactly the same recipe except:
  • The digestive biscuits have been swapped for chocolate biscuits
  • The vanilla has been swapped for melted chocolate

And the holiday fun continues...

It was pretty tempting to just stay on the beach all day but there was loads I wanted to see in Cornwall so off we went. First stop: Eden Project


If you don’t already know, the Eden Project are basically giant greenhouses housing plants from all over the world to raise awareness and share knowledge about them.


I have wanted to go pretty much since it opened and it definitely didn’t disappoint!



Then we went down to Land’s End. It was pretty late in the afternoon by the time we got there so no crowds for us!
                          

It’s actually one of my lifetime ambitions to cycle from Land’s End to John O’Groats so maybe next time I’m there that’s what I’ll be starting?

And we visited Tate St Ives, a modern art gallery. One of the exhibits was room filled with balloons that you could walk through which was pretty fun, if a little strange. And we had our height recorded as part of another exhibit.




We had an awesome few days, it was our first time properly camping but it definitely won’t be our last. I’m already planning out next holiday…

The Green Grass of Home

Me and the man decided we were going to stick with the green grass of home for our holiday this year. So we had a road trip down to St Ives in Cornwall, about 250 miles from where we live.

We are both science graduates so we had a quick stop off in Lyme Regis to enjoy the Jurassic coast.


I think he was secretly hoping we were going to find some dinosaur bones but we did find a little shell fossil.


We stopped overnight in Exeter for no reason other than it was pretty much perfectly half way. But I’m so glad we did, it was a beautiful city. The cathedral in particular was amazing and we managed to turn up during choir practice which pretty much made the day for me!


Then it was off to St Ives! We stayed on a campsite just outside the town which was lovely, if a little windy.


The town itself was lovely and we were completely spoilt for choice with beaches.


In an attempt to make this post shorter, I’ve split it into two so will share a few more pics of what we got up tomorrow.

Impromptu Holidays

A quick apology for the lack of action going on around here, life outside the blogosphere went a little bit crazy. And then I went on my holidays so my blog has had a little unplanned holiday too!

But I'm back so expect some lovely new posts coming up (and some pictures of my holiday to make you all jealous).
