Bake of the Week: Millionaire's Shortbread

Another no-bake recipe this week, Millionaire’s Shortbread! This is a lovely little treat with a cup of tea and pretty quick to make too.


  1. Crush the biscuits into crumbs
  2. Mix with melted butter over a low heat
  3. Push the mixture into the bottom of a baking tin
  4. Heat the sugar and butter into a pan and then add the condensed milk
  5. Bring to the boil, the mixture will thicken
  6. Pour the caramel over the base and chill for 30 mins (until set)
  7. Melt the chocolate and pour over the caramel
  8. Return to the fridge until the chocolate is set
  9. Cut into squares and enjoy

Note to self: Don't leave the shortbread in the sun for ages before photos...

The best thing about this is the fun of the condensed milk turning into caramel! Caramel is also yummy:

  • Poured over icecream
  • As a dipping sauce for fruit kebabs

Take part in Caiti’s summer reading pledge. It technically started at the beginning of June but there’s plenty of summer left! How many books will you read this summer? I read quite a bit on the way to work so I think I’m going to go with an ambitious 10.
